Stuffed Peppers

Recipe -

Stuffed Peppers

I made this recipe for when we go camping, but you can just as easily cook these in the oven.
 

Ingredients: (if you need more than fuor peppers adjust the recipe accordingly)

-4 Large Bell Peppers (salt & pepper to taste)

-1 lb ground beef

-1 TBSP Butter or olive oil

-1 10 oz Package of Frozen Cauliflower Rice

-1/4 cup of Low Sugar Marinara Sauce like Rao's or Mezzetta's

-4 oz Shredded Cheddar Cheese (optional)

-1 tsp of Select Savory Seasonings, Sea Salt Fine

-1/2 tsp Select Savory Seasonings, Select Savory Pepper

-1 tsp Select Savory Seasonings, Select Pizza Seasoning

-1/4 tsp Select Savory Seasonings, California Granulated Garlic

-1/4 tsp Select Savory Seasonings, California Granulated Onion

 

-Directions:

-Wash the peppers and cut off the tops

-Remove the seeds and save the tops

-Season the inside of the peppers with salt and Select Savory Seasonings, Select Savory Pepper

-Cook the frozen Cauliflower according to the directions on the package

-In a large skillet over medium heat cook the ground beef with half of the Sea Salt, half of the Select Savory Pepper, and the Select Pizza Seasonings until the meat is browned

-Mix in the Low Sugar Marinara Sauce and the cooked Cauliflower Rice along with the remaining Sea Salt and Select Savory pepper

-Cook for 2 minutes, stirring frequently

-Set the meat and cauliflower mixture aside and allow to cool

-Once the mixture is cool mix in the optional shredded cheddar cheese 

-Divide stuffing between all 4 peppers. Place the tops back on] the peppers.

-Tightly wrap each pepper in heavy duty foil twice, and put in the fridge until you head out for camping

-Keep in the cooler until it is time to cook them

-Place the peppers on the hot coals and allow them to cook for 30-35 minutes. You can even move the coals around so they surround the foil packs to help them cook all around

-Unwrap, Serve and Enjoy

Baked in the Oven:

-Preheat Oven to 400 Degrees

-Place unwrapped peppers in a baking pan and then cover pan with foil

-Bake for 35 minutes covered, remove foil and bake for 10 more minutes
