Pulled Pork Stuffed Meatballs

 
 

Ingredients:

2 lbs Ground Beef

1 lb Pulled Pork

1 Large Egg

1 Package of Philadelphia Full Fat Cream Cheese cut into small pieces (room Temperature)

1/4 Cup of Almond Meal or 1/4 Cup of Crushed Pork Rinds (lower carb with the pork rinds)

1/4 Cup Bacon Bits, or 8 pieces of Cooked Bacon Crumbled

1 TBSP Select Savory Seasonings Memphis Dry Rub

6-8 Slices of Provolone Cheese (or the cheese of your choice) This is Optional

Your Favorite Sugar Free BBQ Sauce

 

Directions:

-Combine the Hamburger, Egg, Almond Meal (or Pork Rinds), Bacon, Select Savory Seasonings Memphis Dry Rub and Cream Cheese in a mixing bowl.

-Once everything is well mixed take a hand full of the ground beef mixture and flatten out like a hamburger patty

-Take a small amount of the pulled pork (about the size of a golf ball) and place it in the middle of the ground beef patty.

-Once the pulled pork is in the middle of the ground beef patty, form the ground beef around the pulled pork until it looks like a meatball.

-Repeat the process until you have made all the meatballs (makes 6-8 meatballs).

-Once all of the meatballs have been made coat them with the Low Carb/Sugar Free BBQ Sauce of your choice. I like to use a BBQ basting brush for this.

 

Cooking:

You have two options to cook the Pulled Pork Stuffed Meatballs

1) Preheat the oven to 350 Degrees and bake for 45 minutes. With 10 Minutes left place a piece of Provolone Cheese on top of each meat ball (OPTIONAL)

2) Cook on the Grill over medium heat for 15-20 minutes turning half way through. Place the cheese on top of your meatballs with 5 minutes left.
